Impromptu Pumpkin

Last night, Emeril was doing pies for his show, and Jet got it in his head that he wanted orange pie! So John and I found a can of pumpkin in the pantry and I made pie while John went off and got pizza for our dinner.

Jet helped me with cutting the fat in and with mixing all the ingredients of the pumpkin together. We got it into the oven when John got home and we ate dinner while it baked. When it was done, we let it cool for the duration of one Dragon Movie (i.e. one Thomas tape of 30 minutes in length) and then John got out the Redi-Whip and we had pumpkin pie for dessert.

It was warm and under the cool froth of the whipped cream, the pumpkin custard was creamy and soft and perfectly spiced. The warmth and texture surprised me as I think I've only ever had pumpkin pie dead cold from the fridge. It was luxurious and satisfying and strange all in one.

It was great for just suddenly deciding to make a pie. I realized, with my present technique for crust, that I could probably make any kind of pie in an early evening I wanted and it would be warm for dessert after dinner. A dangerous truth to know...
